  • Fresh thyme1 bunch
  • Olive oil3 tbsp
  • Sea salt1 tbsp
  • Cracked pepper1 tsp
Instructions
  1. Preheat oven to 200°C (180°C fan).
  2. Pat chicken dry, season inside and out with salt and pepper.
  3. Halve lemons, stuff cavity with one half plus thyme and crushed garlic.
  4. Rub skin with olive oil, scatter remaining thyme on top.
  5. Roast 60–70 min until juices run clear. Rest 10 min before carving.
